The racks of dirty dishes are pushed through by staff on either side and come out the other end sparkling and almost completely dry.

The second most expensive type is the high-temp rack machine. This works in much the same way as the pass-through model, but the racks of dirty dishes are loaded into a chamber that cleans them using high-temperature water (again over 180°F).
